Winemaking

Each vineyard plot is vinified separately, using gravity throughout the entire process. Grapes are hand-selected in the vineyard and undergo optical sorting at the winery. Fermentation takes place with indigenous yeasts and minimal intervention.

Ageing

Aged for 11 months in 225-litre extra-fine-grained French oak barrels from some of the finest coopers (15% new oak, with the remainder having previously held one or two wines). A further 5% of the wine is aged in Italian terracotta amphorae.

Profile

Crafted by our winemaker, Montxo Martínez, under the guidance of renowned French winemaker Jean-Claude Berrouet. The wine is shaped around freshness, finesse and elegance, rather than overripe fruit, excessive extraction or concentration. Rich in nuance, it evokes the vineyards from which it originates.

Winemaker’s Notes

VivaltuS 2019 can be described as a less structured wine than previous vintages, yet one of remarkable elegance, with the delicacy and grace of a ballerina. Medium-intensity garnet in colour, it reveals distinct nuances between the nose and the palate. The nose shows beautiful ripeness and excellent balance, while retaining remarkable freshness and an abundance of fruit. On the palate, it is fleshy yet elegant, with a harmonious balance between acidity and tannins and excellent integration. The finish is aromatic, complex and long, bringing together all these qualities to create a truly exceptional wine.
