Winemaking

Each vineyard plot is vinified separately, using gravity throughout the entire process. Grapes are hand-selected in the vineyard and undergo optical sorting at the winery. Fermentation takes place with indigenous yeasts and minimal intervention..

Ageing

Aged for 10 months in extra-fine-grained French oak barrels, 20% of which are new. A further 10% of the wine is aged in Italian terracotta amphorae.

Profile

Crafted by our winemaker Montxo Martínez , under the guidance of renowned French winemaker Jean-Claude Berrouet. The wine is shaped around around freshness, finesse and elegance; rather than overripe fruit, excessive extraction or concentration. Rich in nuance, it evokes the vineyards from which it originates.

Winemaker’s Notes

Fleur de VivaltuS 2018 represents a major leap forward in quality for the Vivaltus project, thanks to the outstanding conditions of the growing season and the masterful blending work of Jean-Claude and his son Jeff Berrouet. An expressive, vibrant nose with an abundance of red and black fruit, complemented by delicate floral notes. Spicy and balsamic nuances—woodland, thyme and rosemary—beautifully enhance the exceptional quality of the fruit. On the palate, the wine displays remarkable freshness and tension, with a smooth, silky texture, great complexity and vibrant acidity that invites another sip. The finish is long, elegant and beautifully balanced. An Atlantic-influenced vintage whose character is reflected in the wine’s remarkable freshness and fruit expression.
